Super Mild  (1 pepper)

Boston Red Sox Hot Sauce
Slightly spicier than plain water, but not by much.

Cape Fear Hot Sauce
By CP Specialty Foods, Inc. It claims to be Deadly Hot, Near Death Rating. Although it is very tasty, it is far from hot.

Cholula Hot Sauce (3,600 scoville units)
Jalasco Food Company produces this one. It doesn't make any claims. At least they're honest. Made with pequin and red peppers. Visit their site

Dat'l Do-It Devil Drops
One of the best tasting sauces. It failed to Rap me a good one right in the mouth like it promised. Visit their site

Melinda's Original Habanero Pepper Sauce (1,920 scoville units)
Although it says habanero on the label doesn't mean it is hot. Guess you can't believe everything you read! Visit their site

Tejas Gourmet Smokin Toncils Hot Pepper Sauce
From Brazos Country Foods, it warns you to Use in small quantities. Why? Visit their site

XXX Habanero Pepper Sauce
This Dessert Pepper Trading Company sauce is labeled as Very Hot. Not even mild!

Queen of Farts Hot Sauce
by CA Johns Fiery Foods has an awesome taste if you like the flavor of curry which I love. Their label says it best: "Cut the cheese and kick it up with this famous state of the fart hot sauce! A perfect blend of tropical fruit, curry and just a few habanero peppers - gentle heat, enjoyable for everyone." God save the Queen.

The Reaper Hot Sauce
This sauce is a nice and tasty one but doesn't live up to its name or its slogan "So friggin' hot you'll wish you were dead!!!". I used a quarter of a bottle on a chili dog and still didn't feel any heat. But it does have a good taste. It is made from habaneros and scotch bonnets so you would think it would have more bite. Visit their site.

The Cheech Hot Sauces
From Cheech Marin of Cheech and Chong fame. Cheech has his own line of sauces. See www.thecheech.com for his various products. Briefly, his Mojo Mango is a puree of mangoes and habanero sauce. The mango flavor is overpowering and there is no trace of the habaneros - either in taste or heat. Cheech's Gnarly Garic Habanero Sauce tastes like salad dressing with no discernable heat. The best is the Smokin Chipotle sauce, that is if you like a strong smoke flavor.

Arizona Gunslinger Smokin' Hot Jalapeno Pepper Sauce
Made from jalapeno peppers so you know it's not very hot. Its tasty and would go well with wings, burgers,... Check it out from Arizona Pepper Products. www.azgunslinger.com.

IGUANA XXX Habanero Pepper Sauce
"Pretty damn hot" says the label but despite being a tasty sauce that would go well on just about anything it is not an "8.2 on Richter scale". This "All killer - no filler" sauce is from Half Moon Bay Trading Company.

Sir Fartalot's Hot Sauce
is the cousin of Queen of Farts from Ca Johns Fiery Foods. This is a green Jalapeno based sauce instead of a habanero sauce. As such it is pretty mild. Something about the taste, maybe the vinegar, turns me off.

Scorned Woman Mustard/Scorned Woman Salsa
These products have the same distinctive taste as Scorned Woman Hot Sauce. The mustard makes a great spread for sandwiches, hot dogs,.... It is slightly spicy but not as hot as Dave's Insanity Mustard. Same with the salsa, it's not nearly as hot as Dave's insanity Salsa. Both products are very tasty. "Hell hath no fury like a scorned woman."

Bada Bing Bada Boom Probable Cause Habanero Hot Sauce
So... you think you're safe? Fagetaboutit! This hot sauce doesn't knock or ring the bell. It kicks down the door to your taste buds with intent to provide fiery habanero heat. If the police are at your door, and bland food is your accomplice, they don't need a warrant to search for flavor. They have probable cause!  badabingbadaboomsauce.com

Mildly Mild  (2 peppers)

Ass Kickin Hot Sauce
Slightly spicier than plain water, but not by much. From Southwest Specialty Foods, the Spontaneous Combustion people. Unlike Spontaneous Combustion, this sauce will not kick your ass. Visit their site

Captain Mowatt's Canceaux Sauce
This sauce, by W.O. Hesperus Company, is made from red chills and has a great taste. Visit their site

Chipotle Mexican Hot Sauce
This sauce claims to be Mexico's #1 hot sauce for 60 years. It also claims to be VERY HOT. I say it is very very mild. Their Buffalo version has a very different smoked flavor that I really like.

Habanero Hot Sauce From Hell (3,200 scoville units)
Says it is The World's Hottest Hot Sauce. Hmmm, seems like a pretty bold claim. Dave's Insanity says its "the Hottest Sauce in the Universe" and once you try it you will probably agree. No similarities here. Good Southwestern taste but it doesn't live up to its motto.

Sultans of Sizzle
The Sultans of Sizzle from Original Juan Specialty Foods are some of the best tasting sauces I have had. This boxed set include three great sauces: Batch #37 Garlic Hot Sauce, Batch #114 Jamaican Style Hot Sauce and Batch #218 Louisiana Style Hot Sauce. They are not hot but they have an awesome taste. "There is a point where pleasure and pain intersect. A doorway to a new dimension of sensual euphoria. Where fire both burns and soothes. Where heat engulfs every neuron within you. Once the line is crossed, once the bottle is opened, once it touches your lips, there is no going back! PAIN IS GOOD!"

Mad Cat Hot Sauce
This "Not for pussy cats" sauce is a habanero based sauce from Ashley Foods, the makers of Mad Dog Inferno Sauce. Unlike Mad Dog and despite its "Eat this sauce and you'll wish you had nine lives. It's the only hot sauce that leaves you scratching" label, it has no bite at all. The taste is OK but not great. "Warning, this hot sauce is one cat you don't want to mess with" - NOT.

Tabasco Brand Pepper Sauce (2,140 scoville units)

McIlhenny's Tobasco Brand Pepper Sauce

The old standby. A good tasting sauce for use on just about everything. Unlike most people, I like its vinegar taste. Pretty basic ingredients: pepper, salt and vinegar. I rate it as slightly above mild.

Serving size: one 2 ounce bottle per bowl of chili. That's how a friend of mine and I used to do it.

Don't bother with their Jalapeno sauce. However, I like McIlhenny's Habanero sauce. I rank it as slightly more than mild but I love its taste.

Walkersword Hot Jamaican Scotch Bonnet Pepper Sauce
Maybe the Scotch think its hot.

Almost Spicy  (3 peppers)

Mountain Man
It is refreshing once in a while to go for a good tasting sauce instead of a super hot one! Mountain Man tastes great due to its fire roasted habanero flavor. Its other ingredients include vinegar and salt. Nice taste, mild heat. You can use this sauce on just about anything. From Catskill Mountains Specialty Inc. 1-800-311-fire.

Professor Payne Indeass's Butt Blazin Recipe #6 Butt Pucker XX Hot Sauce
Great taste with a mild burn. This cayenne pepper sauce can be used on just about anything when you want to spice it up a bit. From Sauce Crafters - Florida.

Butt Twister Butt-Blazin' Fire Sauce
from Ca John's Fiery Foods is a combination of great taste and a nice burn. After eating a half dozen Tostitos Scoops filled to the brim with this sauce my lips were left tingling. "This scorcher will blow you away" - well, it may not be intense searing heat but it's a good all around sauce.

The Legend Red Savina Habanero Puree - Vintage 2002 (20,000 scoville units)
from Ca John's Fiery Foods The Legend comes in a real cool looking wooden cylindrical balsa wood box. Only a limited number of bottles are produced each year with the vintage marked on the bottle's label. 2002 brought a severe draught which stressed the habanero plants resulting in superior heat but less sweetness than the prior year. If you have ever eaten a fresh habanero pepper or blended them to a puree, that's what this sauce tastes like.

Spicy  (4 peppers)

Habanero Tabasco Sauce (5,200 scoville units)
McIlhenny's habanero sauce has a taste that I love. It is better tasting than most habanero sauces although it is not very hot. Visit their site

Kato's Island Sauce
Made with Habanero and Cayenne peppers and loads of tropical Mangos. This sauce has a perfect balance of sweet and heat. Kato's Island Sauce is a local legend in South Florida and a National Award winner (runner-up at the Chile Pepper Magazine's 2000 Fiery Food Challenge).

It is not a mega-hot sauce but is one of the best tasting that I have ever tried.

Pleasure & Pain XXX Rated Hot Sauce
"How hot do you like it" asks this sauce from Lil-Nas-Tees Foods. I like it hotter. Made with Cayenne pepper it has a nice taste and a medium heat level. "Step right up if you think you can handle it. This naughty little sauce is going to hurt you with the pleasure of an endorphin rush. You got to have it" claims their label. It hurts go good!

Shotgun Willie's 2 Barrel Habanero Hotter 'n Hell Sauce XXXX
Willies has a very good taste and is pleasantly spicy. Hotter 'n Hell it is not.

Mad Dog Liquid Fire Hot Sauce
What an awesome taste! Use this great product on chicken or ribs on the grill and it will give them a fantastic taste and just the right amount of spice. Scrumptious Combustion according to Ashley Foods. Not nearly as hot as their Inferno sauces, not even Howling Hot as they claim but it is definitely a must try sauce.

The 'S' Blend
A very tasty sauce from W. Parris and Sons.

Tongues of Fire
By Garden Row foods. The Unspeakably Hot Sauce. Personally, I would not speak the word hot when talking about this sauce. However, Garden Row also makes their famed Pure Cap which is a 500,000 scoville unit extract.

Crazy Jerry's Mustard Gas HotCrazy Jerry's Mustard Gas Hot
Inhalation Hazard - May cause nasal hairs to combust. Extremely Hot - Use With  Caution. Despite these warnings and the opinions of a few friends, I rate this a 3 at best. I don't know, I tried it over and over and just don't feel any real burn. Anyway, this mustard sauce comes in a metal canister that looks like it actually might contain mustard gas. This fiery inferno contains mustard, vinegar, water, garlic powder, onion powder, mustard oil, pepper extract, salt and sugar.

The Undertaker
WOOWEE That's Hot! Habanero based with a touch of bourbon. Danger! Extremely Hot says the label although I give it a 4 at most. "You won't quickly forget your experience with The Undertaker! Its flavor surpasses any hot sauce on the market. But Beware! It's one of the hottest available. You may need more than one loaf of bread to take away the heat" according to Bill's friend, Tom Palmerino. I don't quite agree. Butcherbills.com

Spicier  (5 peppers)

Scorned Women (5,900 scoville units)
This sauce provides a quick sensation that lasts. I rate its heat level as a 5 but its vinegar taste is off the scale. This sauce would be a lot tastier if they toned down the vinegar. Hell hath no fury.... Beware the scorned woman!

Sachs Brand Scotch Bonnet Pepper Sauce
This Sachs Scotch Bonnet is crammed full of fresh garlic & cumin. Its full bodied yet smooth mild taste is filled with smokey hints of oak. It is probably the best tasting hot sauce I have ever tried! Pick up a bottle from Rickie's Red Hot, Milford, CT. Visit their site

Heidi Jo's Sun Melting Hot Sauce
This habanero based sauce by Heidi Jo is great! It has the typical fruity habanero taste with a slight bite. The label says: If you know anybody who ever complained there's never any sauce hot enough for them, Heidi Jo's Sun Melting Hot Sauce just might be the one. If this doesn't do the trick their taste buds must be melted! Well, my taste buds are definitely melted because I don't think it is nearly "hot enough to melt the sun". It's by Heidi Jo, Derry NH.

Orange Krush - The Habanero Sauce
Warning - Experienced Chili Heads Only! By Sauce Crafters, Inc . It is rated by them as Very Hot. Although it won 1-st place in the 4th Annual FDM Hot Sauce Shoot-Out - Insane Heat Division in 1997, it won't scorch your mouth. I give it a 5. It's a nice tasting sauce that you can enjoy with a bag of chips. Ingredients: Habanero, vinegar, salt, celery seed, mustard, red pepper, black pepper, bay leaf, clove, allspice, ginger, mace, cardamom, cinnamon & paprika

XXX Calypso Hot
Hot Hot Hot! . . . Just like the Tropics. Sunny Caribbee's XXX CALYPSO HOT is a liquid heat that adds "zing to any 'ting ". A wonderful addition to "bland" BBQ, Salsa's. . . XXX contains a touch of Habanero Pepper and can be used for a mild Heat level. It has a fantastic taste that will make any dish better!

Mildly Hot  (6 peppers)

Martha's Vineyard's Original Hot Peppa Sauce
A specialty item by Mr. G's Gourmet, this peppa has a great taste and a nice amount of heat as well. Where the sauce meets the soul.

Dave's Total Insanity Sauce

Dave's Total Insanity Sauce (48,700 scoville units)
Another fine sauce from Dave. For those who are used to the heat of the original Dave's Insanity Sauce you will find this one considerably milder. But its gourmet garlicky flavor makes this a great sauce!

Hotter  (7 peppers)

Blair's After Death Sauce (49,250 scoville units)

Blair's After Death Sauce

Anything that comes in a bottle with a skull attached to it has to be deadly. This sauce is one of a family death sauces from Gardner Resources, Inc. Their Sudden Death is a bit hotter but not by much. After Death has a stronger capsaicin flavor than most sauces made from habanero extract. Very long lasting effect. Feel Alive!

For the absolute hottest habanero extract try their 3:00 AM Reserve. You must sign a waiver to buy it. It is rated at an unbelievable 2,000,000 scoville units which is 4 times higher than Pure Cap.

Spontaneous Combustion

Spontaneous Combustion by Southwest Specialty Foods

According to Southwest Specialty Foods it was created for the true pyromaniac. The one who says nothing is too hot for me. This sauce gives an instant burn just as its name implies. Your mouth will Spontaneously Combust when you try this sauce. Definitely a winner.

Slap My Ass and Call Me Sally - The Slap Heard around the World

Slap My Ass and Call Me Sall - The Slap Heard around the World

The hottest condiment on earth! according to Chet who produces a line of Slap My Ass sauces. It is hot but has the same kind of taste as Endorphin Rush - I don't like it! I like the heat but not the taste which overpowers anything you put this sauce on. According to the label: WARNING: EXTREMELY HOT! Use with extreme caution. Use one drop at a time. Keep away from children and pets. Wash after use. Do not use if you have heart or respiratory problems. This has the hottest ingredients known to man. So hot in fact that one taste will leave your head spinning, your knees knocking and your mouth shouting, "Well,Smack My Ass and Call Me Sally!!" - Chet. Made with tomato paste, pepper extract, vinegar, molasses, soy sauce and salt.

Steak Sizzler Restaurant Horseradish at Hershey Park, PA
I know, its not a hot sauce but it was so good I had to include it. Horseradish gives off a different type of heat. Its like sniffing ammonia, it burns your nose not your mouth.

I loaded up a steak sandwich with horseradish thinking it would be really mild. Man was I surprised!! This stuff was hot! The only horseradish I had that was hotter was when I used to grind my own fresh from the garden.

When you think its too hot, make it hotter!
